Ingredients
For the Cake:
2 3/4 cups (345g) all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 cup (230g) unsalted butter, softened
2 cups (400g) granulated sugar
4 large eggs, room temperature
1 tbsp vanilla extract
1 cup (240ml) whole milk, room temperature
1/2 cup colorful confetti sprinkles
For the Frosting:
1 1/2 cups (340g) unsalted butter, softened
6 cups (720g) powdered sugar
1/4 cup (60ml) heavy cream
1 tbsp vanilla extract
Pinch of salt
For the Surprise Filling:
1 1/2 cups colorful confetti sprinkles or mini candies
Instructions
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Fold in the confetti sprinkles gently.
Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the Frosting:
In a large bowl, beat the butter until creamy. Gradually add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.
Assemble the Cake:
Level the cakes with a serrated knife if necessary. Use a round cookie cutter (about 3 inches in diameter) to cut a hole in the center of two of the layers. Leave the bottom layer intact.
Place the intact cake layer on a cake board or plate. Spread a thin layer of frosting on top.
Stack the two layers with the cut-out centers on top of the base layer, frosting between each layer.
Fill the hollow center with the confetti sprinkles or mini candies. Top with the final cake layer and frost the entire cake with a crumb coat. Chill for 15 minutes.
Apply a final layer of frosting, smoothing it out with an offset spatula. Decorate with additional sprinkles if desired.
